Chicken Parmigiana Stromboli

"This would be great with any of your favorite pizza toppings inside as well. Delicious!!!"

Ingredients:
1 lb chicken breasts
1 T olive oil
2 C mozzarella cheese, shredded
1 T parsley, fresh and finely chopped
2 T Parmigiana cheese, grated
1 recipe marinara sauce
1 lb bread dough (I use Brooke's pizza crust recipe)

Directions:
Mix bread dough. Knead and let rise for 45 min. In the meantime, sprinkle chicken with salt and pepper. In a large skillet, heat oil over medium-high heat and cook chicken thoroughly. Remove chicken from skillet and let cool; pull into shreds. In a bowl, combine chicken, mozzarella, parsley, parmigiana, and 1 C marinara sauce.
On a floured surface, roll out dough to form a 10x12 inch rectangle. Arrange chicken mixture down center of dough. Cover filling, bringing one long side of dough into center, then overlap with the other long side; pinch seam closed to seal. Fold in ends and pinch to seal. Arrange on a greased baking sheet, seam side down. Gently press in sides to form a 12x4 inch loaf. Brush loaf with 1 egg white and sprinkle with Italian seasonings and additional grated parmigiana. Bake at 350 for about 35 min. or until dough is cooked and golden. Cut Stromboli into slices and serve with heated marinara sauce.
