Ingredients:
1 lb hamburger, cooked with 1 onion and drained
1 (4 oz) can green chilies
1/4 C chunky salsa
1/2 tsp garlic salt
1 tsp cumin
1 (14 oz) can diced tomatoes
1 (10 oz) can Rotel tomatoes
1 (10 oz) can Enchilada sauce
12 corn tortillas
2 C grated mild cheese
Directions:
To make hotter you can substitute any or all of the following: Hot Rotel tomatoes, Hot enchilada sauce, hot cheese, diced nacho jalapenos instead of the green chilies.
Put meat filling in a bowl. Put sauce in a pan and warm through. heat tortillas in a towel in the microwave. Put 1 C of cheese in a bowl. Dip warm tortillas in warm sauce and then lay flat on a cookie sheet. Fill each tortilla with 1 T of the meat mixture and 1 T of cheese.
Roll up and place seam side down in a greased 9x13 pan. Pour remaining sauce over all. Cover and bake at 350 for 45 minutes. Sprinkle with 1 C cheese. Let sit 10 minutes before serving. Serve with any or all of the following: Sour cream, sliced nacho jalapenos, guacamole.
