Blonde Toffee Brownies

Ingredients:
1/2 C butter or margarine, softened
1 C sugar
1/2 C brown sugar, packed
2 eggs
1 tsp vanilla extract
1 1/2 C flour
2 tsp baking powder
1/4 tsp salt
1 C English toffee bits or almond brickle chips

Directions:
*Or re-name the cookie and put carob or chocolate or peanut butter or butterscotch chips. Sometimes I throw in some coconut too.

I'm sure you can use two bowls for the wet and dry stuff and add or fold or sift or blend gently or do the add one egg at a time thing or you can do like me:
Use one bowl and throw it all in and mix it all in together (always the flour last) to get it just right. "Spread evenly" the recipe says (Like we don't do that?!). Do you know anybody who just glops it all on the end of the pan and puts it in the oven? Oh my!
Anyway, 13x9 pan or whatever you have... (the recipe says it should be two inches high! MY MY!
Bake at 350 for about 35 min. Like any cookie or cookie bar... if you take it out 1/2 minute before they are done, they are so much better. That 1/2 minute is the secret to baking.

P.S. Save yourself time and double or triple this recipe. Freeze some so that you can serve them to the home teachers (yeah, right.. like there will be any left!). They are really good!
