Ingredients:
1 T vegetable oil
1 T butter
1 medium green pepper, chopped
5 green onions, chopped
1 tsp garlic, minced
2 T flour
1 lb medium shrimp, deveined, peeled, and cooked
1 C boneless skinless chicken breasts, small cubes
1 tsp celery salt
1/4 tsp red pepper
1/2 tsp red pepper flakes
1 lb Velveeta cheese, Mexican flavor
1 can Rotel tomatoes and green chilies
1 (4 oz) can mushrooms, drained
1/4 C dried tomatoes, diced
Directions:
Cook angel hair pasta... enough for 4.
Heat 1 T oil in wok or skillet.
Add chicken and stir-fry on high heat til cooked through. Take out of pan and set aside.
In same pan, saute green pepper, onions and garlic in 1 T butter until tender. Slowly stir in flour until blended. Stir in shrimp, cooked chicken, celery salt, red pepper and red pepper flakes. Stir well.
Add Velveeta cheese, Rotel tomatoes, mushrooms and dried tomatoes. Stirring occasionally til cheese is melted and mixture is bubbly.
Serve immediately over the cooked pasta.
Top with Parmesan cheese if desired.
