Ingredients:
1 box yellow cake mix
Crust Ingredients:
1/2 C melted butter
1 egg
Filling Ingredients:
2 cans pumpkin pie filling
1 1/2 tsp pumpkin pie spice (I do a little more)
1/3 C sugar (I do a little more)
1 can evaporated milk
2 eggs
(I also add a little cinnamon and nutmeg)
Streusel Topping Ingredients:
1/4 C sugar
1 tsp ground cinnamon
1/4 C butter, softened
1/4 tsp pumpkin pie spice
Directions:
Set aside 1 C of the cake mix in a medium sized bowl (for streusel topping).
Mix together remaining cake mix, 1/2 C melted butter, and 1 egg. Press into bottom of 9x13 greased baking pan.
Mix together filling ingredients. Pour over crust.
Mix together sugar, ground cinnamon, pumpkin pie spice and 1 C cake mix. Cut in butter and mix until crumbly (don't over mix!). Sprinkle over filling.
Bake at 350 degrees for 50-60 min or until a knife put in the center comes out clean. Chill immediately after removing from oven so that the filling sets up and the streusel topping doesn't get soggy. Cut and serve when completely cool (takes a while. Might as well let it sit overnight. It is well worth the wait, though!). Serve with whip cream. Refrigerate left overs quickly.
