(Teresa's note: I tasted this and it is awesome! A must in every recipe book.)
Ingredients:
1 1/2 pkg vanilla creme cookies
1/2 C butter (no subs)
2 eggs, well beaten
2 C powdered sugar
8 peaches, peeled and sliced
1 pint whipping cream
2 tsp vanilla
3/4 C powdered sugar
Directions:
In a gallon Ziploc bag, crush cookies (bigger chunks are fine). Place 3/4 of the crushed cookies in the bottom of a 9x13 pan. Reserve the rest to place on top of the dessert.
Melt 1/2 C butter in saucepan and add the mixture of eggs and 2 C powdered sugar. Mix well and bring to a full boil over medium heat, stirring constantly. Cook for an additional 1 minute after reaching a full boil, stirring constantly. Drizzle mixture over the crushed cookies in a 9x12 pan.
Place peaches on top of crushed cookie mixture. Whip the cream and add the vanilla and powdered sugar. Spread whipped cream over the peaches. Sprinkle remaining crushed cookies.
Refrigerate overnight or at least 8 hrs before serving. Enjoy! Fresh strawberries or bananas would be really good in this recipe too!
