Southern Cheddar Biscuits

Ingredients:
2 1/2 C all-purpose flour
1 T baking powder
3/4 tsp kosher salt or salt
1/4 tsp baking soda
1/3 C cold butter, cut into 1 inch pieces
1/4 C shortening
1/2 C shredded sharp cheddar cheese
1 1/4 C buttermilk

Directions:
In a large bowl, stir together the flour, baking powder, salt and baking soda. Using a pastry blender, cut in cold butter and shortening til mixture resembles course crumbs. Stir in the cheese. Make a well in the center of the flour mixture. Add buttermilk all at once. Using a fork, stir just til moistened (Do not overwork the dough).

Turn dough out onto a lightly floured surface. Kneed dough by folding and gently pressing dough for 4-6 strokes or just till dough holds together. Pat or lightly roll dough into a 12-inch square. Cut the dough with a floured knife into 16 3-inch squares.

Arrange biscuits on ungreased baking sheets. Bake in a 450 degree oven for 10-12 minutes or til golden. Remove biscuits from baking sheet. Serve warm.
